Azayakaの茶筅は、特別に加工された一本の竹から職人が手作りしています。伝統的な竹茶筅は、冬の寒さで硬くなった竹を使い、代々家族で技を受け継ぐ職人が一本一本丁寧に仕上げる儀式用の芸術品です。100本の細い枝（ヒダ）があり、すべてが熟練の技で切りそろえられ、細い縄で丁寧に編まれ、先端は巻き上げられていて、抹茶の茶葉をしっかり攪拌し、滑らかな味わいを引き出します。

なぜ抹茶は泡立てるべきか？
抹茶をかき混ぜる主な理由は、抹茶が熱湯に溶けにくいためです。抹茶をすくい上げると溶けているように見えますが、よく見るとたくさんの粒子が浮遊していて、茶液が溶けているように見えているだけです。時間が経つとこれらの粒子は底に沈みます。もうひとつの理由は味わいです。泡立てることでできる泡が味をまろやかにし、飲みやすくしてくれます。
茶筅の選び方
伝統的な茶筅は若い竹から作られており、太さや細かさが様々です。茶筅の“ヒダ”の数は16本から120本まであり、ヒダが多いほど抹茶を泡立てやすくなり、甘みのある軽やかな口当たりを生み出します。ヒダが少ないものは逆に泡立てにくくなります。茶筅を選ぶ際は、竹の質やヒダの切り方・形作りの精密さ（0.1ミリ単位）に職人技が現れます。
